Our Memorable Christmas and New Year’s Trip to Florida

It’s been a long time since I last posted! It feels so good to be writing on my blog again. Can you believe it’s almost April already? Time flies by fastโ€”everything feels like a blur these days!

But let me take a moment to backtrack and share about our unforgettable Christmas and New Year’s trip to Florida last year.

Planning the Trip: A Family Reunion Across Borders

We invited my parents from the Philippines to join us for a vacation in Fort Lauderdale, where my mother-in-law lives, and later in the Cayman Islands, where we reside. Making this trip happen was no small feat. It took months of preparationโ€”handling paperwork for U.S. and Cayman visas, arranging accommodations, planning tours, and even renting a car for the entire vacation.

Christmas Eve Arrival in Fort Lauderdale

We arrived in Miami on Christmas Eve, while my parents landed in Fort Lauderdale. The plan was to rent a car in Miami, drive to Fort Lauderdale to drop off our luggage, and then head straight to the airport to pick up my parents.

After settling in, we went grocery shopping for our Noche Buena dinner. Thankfully, there was a grocery store nearby, so we quickly gathered what we needed. We also stopped by T-Mobile to grab a pocket Wi-Fi for the trip.

On Christmas Day, we enjoyed a scenic drive around the area and spent some time shopping at Sawgrass Mills, one of the largest outlet malls in the U.S. If you’re in Fort Lauderdale, it’s definitely a must-visit for great deals and a wide variety of stores.

Exploring Biscayne Boulevard, Miami

The day after Christmas, we decided to explore Downtown Miami and stroll along Biscayne Boulevard. This area is known for its scenic views, which are lined with palm trees and modern architecture, offering stunning vistas of Biscayne Bay. We even hopped on a tour bus and enjoyed the breezy upper deck, taking in the sights of the city.

It was a no-brainer for lunchโ€”we headed straight to Jollibee, my favorite Filipino fast food spot! Nothing beats the comfort of crispy Chickenjoy and sweet Jolly Spaghetti when you’re far from home.

Adventures in Orlando

NASA – Kennedy Space Station

When the weekend came, we headed to Orlando for more adventures. Our first stop? NASA’s Kennedy Space Center. This iconic attraction is a must for anyone curious about space exploration. We marveled at historic spacecraft, learned about NASA’s missions, and even experienced interactive exhibits that brought the cosmos to life.

We stayed at the Developer Inn in Kissimmee for accommodation. It’s a budget-friendly hotel near NASA, Disney World, and Universal Studios, making it the perfect base for our Orlando explorations.

Disney World – Animal Kingdom

Next up wasย Disney’s Animal Kingdom. Since it was everyoneโ€™s first Disney experience (except for me), starting with this nature-themed park made sense. Our group includedย three senior citizens, two adults, and one child, so Animal Kingdom’s immersive environment and diverse attractions were ideal.

Despite the busy season and long lines, we managed to enjoy some of the park’s best rides:

  • Kilimanjaro Safaris: An open-air ride where we spotted real African wildlife.
  • Avatar Flight of Passage: A breathtaking 3D ride where we soared over Pandora on the back of a banshee. Definitely a must-do!
  • Kali River Rapids: A thrilling white-water rafting adventure through the lush jungles of Asia. Expect to get soaked as you navigate turbulent waters, dodge waterfalls, and experience the rush of swirling rapids. Itโ€™s an exhilarating ride that adds a fun, unpredictable element to your Animal Kingdom visit.
  • DINOSAUR: An exhilarating indoor dark ride where we boarded a Time Rover to travel back to the late Cretaceous period. The mission? To rescue an Iguanodon before the meteor that caused the dinosaursโ€™ extinction strikes. The ride was intense, with sudden twists, turns, and encounters with various dinosaur species, including a menacing Carnotaurus.

If you’re planning a trip, I highly recommend heading to Avatar rides first as they are the most popular, and lines can be long.

Universal Studios CityWalk

On our last day in Orlando, we explored Universal CityWalkโ€”an entertainment district filled with vibrant shops, restaurants, and live music. Even without entering the main parks, CityWalk offered a picturesque experience. Some popular spots here include Hard Rock Cafe, Voodoo Doughnut, and Universal’s Great Movie Escape. Itโ€™s a great place to enjoy a relaxed stroll, grab a bite, or shop for souvenirs.

Our drive back to Fort Lauderdale was memorable, as heavy rain made the I-95 journey cautious and slow. My husband handled the tricky drive with care, ensuring we arrived home safelyโ€”though it was the longest three-hour drive weโ€™ve had!

We attended my mother-in-law’s church service on New Year’s Eve and later headed to the Fort Lauderdale anchor drop. Unfortunately, we were a few minutes late and ended up catching the tail end of the countdown while still in the car! Nevertheless, it was a unique way to ring in the new year, and the festive atmosphere was still in the air.

The anchor drop is a signature New Year’s tradition in Fort Lauderdale, symbolizing the city’s nautical culture. It’s held at Las Olas Oceanside Park and features live music, food vendors, and a fun community vibe.

Wrapping Up the Trip

The remaining days were filled with more shopping at Sawgrass Mills and spending quality time with family. On January 3rd, we flew back home to the Cayman Islands, cherishing the memories of a trip that brought joy, adventure, and togetherness.

This trip was truly a labor of loveโ€”months of planning, coordinating, and navigating travel logistics. But seeing my family together, creating unforgettable memories, and experiencing new places made every effort worth it.

If you’re planning a similar trip, my top tips are to plan early, be flexible, and savor every moment. Sometimes, the spontaneous momentsโ€”like a last-minute drive to Biscayne Boulevard or a delayed New Year’s countdownโ€”make for the best stories.

Until the next adventure!

Ocho Rios Day 3: Dunn’s River Falls; Montego Bay, and Holland Bamboo

We woke up bright and earlyโ€”againโ€”to pack up for the day. First stop: Dunnโ€™s River Falls in Ocho Rios, then off to Montego Bay! Even though our legs were still recovering from yesterdayโ€™s Mystic Mountain adventure, there was no way we were skipping this iconic Jamaican gem. Dunnโ€™s River Falls is one of Jamaicaโ€™s most famous natural attractionsโ€”think cascading limestone terraces and cool mountain spring water rushing all the way down to the beach. Itโ€™s not just pretty to look at; people actually climb up the falls, making it part adventure, part nature therapy. ๐ŸŒฟ Seeing the falls in person was a bit surprising. Photos online make it look huge, and while itโ€™s definitely not Niagara-level tall, itโ€™s still a breathtaking sight. The sound of…

Fun things to do in Cayman, other than water sports!

Hey everyone! How was your week? Mine has been pretty hectic, a lot of changes in my workplace and I had to take on a big responsibility all of a sudden. I spend my 7 hours at work fully and productively. After work I roam around West Bay and George Town to practice my driving skills, and do some errands every now and then. Sometimes I feel like all I ever do is work, eat, and sleep! Anyway, back to what I was saying, my mentor resigned effective immidiately before I was fully trained so I had to take on the responsibility earlier than expected, with support only from the offshore team. So much drama and tea! Well I could feel that she wasn’t really…

    We got married!

I can’t believe it! I am now officially part of the married women club! Nothing much has changed, to be honest, given that my husband and I have been living like a married couple for a while now. But still, it’s nice to know that we’re now officially bound together for life.  We decided to get married in the Cayman Islands to avoid the tedious process of applying for a marriage license in the Philippines. We’ve been trying to sort out all the paperwork since January this year, but the back and forth of legal requirements took a lot of effort, time, and money. So, we decided to bypass all the red tape, get married locally, and do a destination wedding ceremony in the Philippines…

    Fun day with my angels

I feel like my insomnia is a symptom of something more serious. I’ve been restless for weeks now. I am already on Zopiclone and Zoloft yet I feel like none of them are working? ๐Ÿ˜ฉ I feel so dry, nothing seems to be interesting to me anymore. I even went as far as googling “how to find new hobbies” lol I’m desperate. I guess it really hit me when my friend said blogging is a waste of time and that she can’t fathom why I would want to share my personal business online. I’ve been blogging since 2006 and somehow this has been my “hobby”… and the first time I opened it up to my friend she said she is never going to read it….

  • One Cayman Carnival

    One Cayman Carnival

Today went to the annual adult street parade for Batabano / CayMAS in George Town. There were loud music, colorful costumes, people dancing in the streets, random strangers hyping each other up, drinks flowing everywhere! It was one of those events where you can just feel everyone letting loose and enjoying life for a day. If youโ€™ve never experienced Caribbean carnival before, itโ€™s basically a huge cultural celebration rooted in music, freedom, history, and self-expression. Different islands celebrate it differently, but the common themes are soca music, elaborate costumes, dancing, and community. Carnival in the Caribbean has deep historical roots tied to emancipation and cultural identity, evolving over generations into the massive celebrations we see today. What made this year interesting is that Caymanโ€™s two…

I’ve never been on a party bus before EVER – so imagine my excitement when I found out that Star FM is hosting a halloween bus party! There are 4 buses, 4 mystery stops (with games & missions), and 1 exclusive after party! Starting point is at the courtyard across the radio station in George Town and where the bus is going? Nobody knows! 1st stop: Hell, West BayMission: Take a group photo with the devil I was hoping for the bus to go East for a change but oh well this year they decided to rome around West Bay – my district. First task is to take a group photo with the devil (kinda lame but yeah lol). Nobody gave af about the mission,…
