Quick and easy dishes for your quarantine life

Curfews and lockdowns are just about everywhere  and being laid off leaves me nothing much to do at home except cook cook cook! My mom used to tell me that sautè-ing is the beginner’s introduction to almost all Filipino dishes. So by watching numerous tutorials on YouTube (highly recommend PanlasangPinoy!) and reading cookbooks, I’m going to share with you my very easy “walk in the park” recipes for three dishes below that basically start off with Sautè!

Cook Book Episode#1: How To Sauté?

Chicken Sarciado

Ingredients:
  • Chicken wings (or any part you prefer)
  • Cooking oil
  • Minced garlic
  • Sliced onions
  • Tomatoes
  • Eggs
  • Water
  • Salt and pepper to taste
  • Fish sauce
  • Chicken cubes (optional)
  • Soy sauce, lemon, vinegar, and all around seasoning, parsley flakes to marinade (optional)

Recipè:

  1. Marinade the chicken using all around seasoning, soy sauce, a little bit of vinegar, lemon, salt, pepper, and parsley flakes
  2. Fry the chicken until it turns light brown and set aside
  3. Sautè the garlic for a few seconds, wait for it to smell and turn light brown, then add the onions. Stir for a for seconds then add the tomatoes
  4. Add the fried chicken and simmer for a few mins
  5. Add water and wait for it to boil
  6. Add the chicken cubes (optional) and stir
  7. Add the beaten eggs and stir until the consistency thickens
  8. Add fish sauce, salt, or pepper according to your preference
  9. Simmer for a few minutes and violá! Chicken Sarciado!

Sweet Style Spaghetti

Ingredients:
  • Spaghetti
  • Ground beef
  • Cooking oil
  • Minced garlic
  • Sliced onions
  • Del Monte Sweet Spaghetti Sauce
  • Water
  • Salt and pepper to taste
  • Grated cheese
Recipè:
  1. Boil the Spaghetti until cooked. Set aside.
  2. On a separate pot, put cooking oil and sauté the garlic first. Wait for it to smell and turn brownish, then add the onions.
  3. Wash the ground beef first. Sauté the ground beef together with the garlic and onions.
  4. Add a little bit of water.
  5. Simmer for 5 mins.
  6. Add salt and pepper according to your preference.
  7. Add the Del Monte Sweet Style Spaghetti Sauce (or any sauce you prefer!)
  8. Simmer for another 5 mins.
  9. Pour the sauce to the spaghetti and sprinkle grated cheese on top!

Beef Stir Fry

Ingredients:

  • Beef strips
  • California blend vegetables or stir fry blend (includes broccoli, cauli flower, young carrots)
  • Cooking oil
  • Minced garlic
  • Sliced onions
  • Beef cubes
  • Oyster sauce
  • Water
  • Cornstarch
  • Salt and pepper
Recipè:
  1. Marinade the beef with oyster sauce and set aside
  2. On another pot, sautè the garlic first, wait for it to smell and turn light brown, then add onions.
  3. Add the marinated beef strips
  4. Simmer for a few mins then add oyster sauce
  5. Stir until the beef softens
  6. Add water
  7. Add in the beef cubes
  8. Wait for it to boil so the beef strips will soften more
  9.  Add in the California blend vegetables
  10. Simmer for a few mins until the vegetables get cooked
  11. Add salt and pepper according to your preference
  12. Add a little bit of diluted corn starch if you want the sauce to have a thick consistency
  13. Stir until ready!

I am still in the process of discovering new stuff and I definitely enjoyed this one.  I am a newbie in this field so I most rely on tutorials. Fortunatley enough, the dishes that I tried turned out to taste good so feel free to try them out too! Leave a comment and let me know how it turned out for you^^

  9. Thank you for sharing your recipes in quarantine! Cooking has been something I've been thinking of actually learning how to do this isolation season, mostly out of necessity, but I'm still so stumped. I literally had baked beans on toast for dinner today :'). I really love how your recipes have a filipino edge to it.
